My question is regarding the organizational types.   Are we to support only the 3 definitions given under the title or the basic strategy sets and characteristics & behavior as well?

You must support all of the areas, not just the ones at the top.

Also, if we are to support the basic strategy set and characteristics & behavior, for the ones where we have not been given info in the case to determine if it is so, is the phrase "not enough information in case to make this determination" sufficient?

The statement is ok if there actually is no information. If there is some info, but not enough, then you probably need to indicate what's there and why its not enough.

My question is though defenders are known to be companies that have existed a long time, could this not also apply to a prospector ?

ALL organizational types under Miles and Snow COULD have existed for a long time (or a relatively short time). Time of existence isn't one of their factors. They studied large companies, all of which had existed for a relatively long time. The important issue is whether this company meets the specific characteristics of the type you think they fall under.
